#356 recipe for yummy delicious dip or sandwich filling

The new recipe I made this week is from a daily email from Hungry Girl. It's called Buff Chick Hot Wing Dip. Here's the directions:

Two 9.75 oz cans 98% fat free chunk white chicken breat in water, drained
One 8 oz tub fat-free cream cheese, softened
1/2 cup Frank's RedHot Original Cayenne Pepper Sauce
1/2 cup shredded part-skim mozzarella cheese
1/4 cup fat free ranch dressing
1/4 cup fat free Greek yogurt

Preheat oven to 350 degrees.

Place cream cheese in a medium bowl and stir until smooth. Mix in Frank's RedHot, mozzarella cheese, ranch dressing, and yogurt. Stir in chicken until thoroughly combined. Spoon mixture evenly into a deep 8x8 baking dish.

Bake in the oven for 20 minutes or until mixture is heated through. Stir well and enjoy.

I used a little more chicken than called for in the recipe. I had two 12 oz cans. Also, the store I went to didn't have Greek yogurt, so I used plain fat free yogurt.

I dipped baked pita chips into the dip. Those were good, but the best thing is to use the dip as a sandwich spread. It is delicious and filling.

For those of you keeping track, 1/4 cup of this delicious dip is only 1 Point!!

I cannot tell you how yummy this is. I just can't find the words to describe how much I enjoyed eating this today. It's spicy, but doesn't burn your mouth. It's filling because of all the chicken. If I were to add anything, I'd probably add a little more mozzarella. The Greek yogurt would probably make it a little creamier and/or thicker, I guess. I didn't want to go store hopping to find Greek yogurt, so I improvised. I was fine with it.

My friend Nicole made a similar dip for a work party we had a few months ago. I believe she made a full-fat edition; you can probably find a recipe online or at the Frank's RedHot website. I remember that it was really good, and I knew Hungry Girl had a version of it, but I couldn't find the recipe. (I didn't really try too hard, either.) When I got the email last week, I knew that was my recipe of the week. Try it! It's good and easy.

T scored two more points in his b-ball game today! He played great :o)

T and I went to see the Jazz play the Cleveland Cavaliers on Thursday. We left with 40 seconds to go. The Jazz were down by six points and we didn't think they had any chance to win. We were wrong. The Jazz won on a last second three point shot by a rookie guard. It was the talk of the town and we missed it. I've been kicking myself since then.

It has been foggy and inversion-y all week. We are supposed to get rain and snow next week and it should clear up the air. Salt Lake City had the worst air quality in the nation this week. The trees look really pretty though. They are all white because they are covered with this thick hoar frost.

Oh! It's Saturday which means I went to Weight Watchers this morning. I lost 1 pound last week! 100, here I come!
