It feels like it's been a long time since I've written. When was the last post? Wow, on the 16th, so it's only been a week. Still, it seems like a long time.
I made two new recipes this week. I guess I've been on a Hungry Girl kick, because both of the new things I made this week are from her website. The first thing I made was the Egg Mug Classic. It's very simple:
1/2 cup Egg Beaters
1 wedge Laughing Cow Light Original Swiss cheese, cut into pieces
Spray a cup lightly with non-stick cooking spray.
Pour in the Egg Beaters; stir in the pieces of Laughing Cow cheese.
Microwave on high for one minute.
Remove from microwave and gently stir.
Return mug to the microwave and heat for 30-45 more seconds until scramble is set.
I put my eggs in a wheat tortilla from La Tortilla Factory with a little Cholula hot sauce. It was very tasty and very filling. 3 Points for those of you keeping track at home.
The second dish I made was HG's Apple iCobbler. This one has lots of ingredients, so if you are intersted in it, please click on the link for the full recipe. Ever since I had apple cobbler at the Jazz game on Thanksgiving night, I've been craving more delicious hot apples with crunchy topping over vanilla ice cream. I saw this recipe and I thought it would be perfect. And it is pretty tasty, if you can get over the fact that the topping looks a little like taco meat. I thought it looked like taco meat when I was making it, then even MT said, "Um, did you put taco meat on those apples?" We'd had tacos for dinner, so even though it sounds a bit ridiculous, it made sense to me.
Anyway, I did put the apples over some fat free vanilla yogurt blend ice cream (made by Dreyer's and it is yummy!) It tasted pretty decadent. I only wish the topping was crunchier and didn't resemble meat. I think next time I try this recipe, I'll make the topping first so it will have time to cool so that when I put it back in the food processor, it will by more crumbly than sticky.
Making a new recipe every week has been pretty fun so far. Sometimes when I think I won't be able to find something new to make, I'll see a recipe from Hungry Girl or All Recipes.com - I get daily emails from both of those websites - that will give me an idea. Still, I'm only a few weeks into this resolution.
Another little plan I have for this year was inspired by my mom. She told me that she and Dad always eat at the same restaurants and they were feeling like they were in a little rut. (MT has said the same thing about us.) I suggested that since they live in an area with so many dining options, they should try a new restaurant every month. Thinking about MT's comment made me decide we should also try a new place. So today, that's just what we did! We went to MacCool's Pub in The District. We went around 3:00 because I like a late lunch/early dinner on Sunday. We got to sit back in the bar area and watch the football game for awhile, and that was nice because there were no other people back there, so it was like we had the place to ourselves.
I had fish and chips. I haven't had that much fried food for awhile and it tasted really good while I was eating it. My tummy churned a little when I got home. MT had the meatloaf and T had chicken strips. T didn't really like his chicken (??), but MT and I liked our meals, and we agreed that we'd probably go there again. It was fun to go to a different place. We've thought of three other places to try in the coming months: Cafe Madrid, a Thai place, and The New Yorker.
So with all this talk about food, how did my weigh in go? I lost .6 lb this week. I'll take it!
That's all I've got for tonight. I'll try to write sometime this week and not focus completely on food.
