#1110 the weather is just right for comfort food

Let me just tell you that the "Continental Beef" recipe that I made on Sunday and that we ate on Monday was fantastic! All three of us liked it a lot, and I will definitely make it again. Here's what was in it:

round steak
onions
mushrooms
beef broth
tomato sauce
Worcestershire sauce
garlic
sugar
salt & pepper

I cut up a medium onion and put it and the mushrooms into my big blue pot with a little oil and butter. I let them cook until they were nice and soft and smelled amazing. While that was happening, I cut up the round steak into cubes and dredged it in flour. I took out the onion/mushroom mix from the pot and browned the meat in a little more oil and butter. I took the meat out and put in the beef broth, scraping up all the yummy bits from the bottom of the pan. Then I added the tomato sauce, Worcestershire sauce, minced garlic, sugar (just a tablespoon), salt and pepper. I stirred all that together and put the meat and veggies back in, covered the pot, turned the heat on low and let it simmer away for a couple of hours.

The meat was so tender! The sauce was extra beefy from the stock and the browned bits. I served it over lightly buttered egg noodles. It was awesome. The definition of comfort food! I wished I'd had some good bread so I could sop up the delicious gravy, but I didn't. Next time.

This morning when I woke up, there was about two inches of the fluffiest, powderiest new snow. Apparently last night's snow was just the beginning of a line of storms that will come into the area this week. We can use the moisture, but I would prefer rain and non-freezing temperatures in the valley. It can snow all it wants up in the mountains.

We don't have much going on this week except that we are looking forward to watching the Olympics. I think the Opening Ceremony is Friday. MT and I are Olympic junkies!
