#506 recipe for marinara sauce

I was thinking that I haven't posted any new recipes lately. I have been trying some new things, but they must not have been very good or memorable. I remember one that I tried was a tamale pie and that was the night my oven broke down, so I ended up "finishing" it on the stove-top and it wasn't awesome that way. I ate it, but the cornbread part was a bit wonky. I'll try it again and post the results.

Today I did make something new. I've been wanting to try a recipe from "Everyday Italian" by Giada de Laurentiis, and the recipe I want to make calls for her marinara sauce, so I made her marinara sauce today and I'll use it later this week. I tasted the sauce, and it's quite delicious, and easy to make.

Finely chop:
2 small onions
2 cloves garlic
2 peeled carrots
2 celery stalks

In a large pot, heat about 1/2 cup of extra virgin olive oil over medium low heat. When the oil is hot, add the onions and garlic. Let them saute until tender, about 10 minutes. Add the carrots and celery, along with about 1/2 teaspoon of sea salt and the same amount of black pepper. Saute until the veggies are soft, about 10 - 12 minutes.

Add about 64 oz of crushed tomatoes and two bay leaves. Stir everything together.
Turn heat to low and simmer for about an hour.

The sauce is sweet and flavorful. I can't wait to try it over pasta!

That's all I have to say for tonight. Well, there is one more thing...my bracket is still doing ok. On one side I have all eight teams in the Sweet 16. On the other side, if all goes well in the late games, I'll have five of eight. One team I picked for the Final Four, Pitt, is already out, so the best I can do is three out of the Final Four. Hopefully that will be enough.
