One of my resolutions this year was to try a new recipe every week. I started out ok, as most resolutions do, but let me tell you something: finding a new recipe to try every week takes a lot of energy. I just couldn't do it. I think maybe one new recipe a month is much more do-able. I'm pretty sure I've tried at least ten new recipes this year. I'll check on that and get back to you later.
There is a point to this story. I tried a new recipe tonight, a soup recipe. MT and I have gotten into the habit of going out for lunch on Sunday afternoon. We eat a big lunch - usually Mexican - and then we're not too hungry later, but we like to have a little something. Since it's been cold, I thought we'd have some soup. I saw a recipe for baked potato soup in the "Hungry Girl 300 Under 300" cookbook. I modified it a little, and it was pretty good! It was really easy, too. Here's how I did it:
1 large or 2 medium potatoes
1 tablespoon canola or olive oil
2 tablespoons chopped onion
1 clove minced garlic
3 cups fat free chicken broth
1 cup 1% milk
1/4 cup flour
1/4 cup shredded cheddar cheese
1 tablespoon non-fat Greek yogurt (or sour cream)
4 slices pre-cooked crispy bacon
salt and pepper
Pierce the potatoes with a fork in multiple places. Microwave for about 10 minutes until the potatoes are soft. When the spuds are cool enough to handle, peel the skin and mash the pulp in a bowl. Set aside.
Add canola oil to a medium sized pot. Heat to medium-high, add onion and garlic. Cook for a couple of minutes until onion is soft. Add broth and milk. Slowly add flour, stirring constantly, until it has completely dissolved.
Add mashed potato and stir until completely blended. Add the other ingredients. Mix well, reduce heat, and let simmer for about five minutes.
Top with a bit of sour cream, shredded cheese or whatever you like to put on a baked potato. Enjoy!
I thought the soup was tasty and filling. MT said it was good and that is high praise. (Usually the best I get is "It's not bad." Praise without a negative word is high praise!)

In other news, I took T shopping today. He needed a new coat, some new jeans and some "church clothes". (I'll elaborate on that another time.) He's grown into the next size already. He almost looks me in the eye when we talk. Soon I will be the shortest person in this house.

There was a bomb threat in the Wal-Mart in our neighborhood. Good thing I didn't shop there today.

Last thing...I enjoyed the extra hour of sleep this morning, but now I'm ready for bed. My body thinks it's 10:00 although the clock says it's only 9:00. I'm pretty sure that alarm ringing at 5 am will still seem dang early.
