#2024 foodie Friday

Tonight when I was walking in circles (around the indoor track) at the gym, I listened to music and let my mind wander. I thought about food. I thought about the lyrics to the songs I was hearing. I thought about T. I thought about what I was going to do tomorrow morning. I thought about Red Butte Garden. I thought about food. I thought about my sister's blog and the poems she has been posting recently. I thought about what I was going to write about here tonight. So. Many. Thoughts.

As you might have noticed, I kept coming back to food. Maybe I was extra hungry tonight. Most of my thoughts about food centered around the truth that things are better in the evenings if I have some food prepared ahead of time that can be simply reheated. Better for my lunch plans also. I did make some spaghetti sauce with meatballs last weekend, and we had that for dinner a couple of nights, so that was good. It's best if I cook a couple of dishes so there is some variety and lasts a bit longer.

I've been thinking about what I should make this weekend. Right now I'm thinking chicken enchiladas sound dang good. I could make a big pan of enchiladas and everyone would be happy. I'm not sure what to make for the second dish, so time on Pinterest is needed. I have a few boards with food pins: recipes to try, recipes I have tried and that were good, recipes I've tried that need a little tweaking, you get the idea.

Another food thought I had was that I really ought to figure out a way to eat more veggies. I think I've written before about my overall dislike of vegetables. What's weird is that I was looking at a health resource we have at work and there was a recipe for roasted vegetables that I actually thought sounded really good. I thought about the way that butternut squash gets all sweet and soft when it is roasted and suddenly roasted strips of peppers and mushrooms and onions and squash sounded like it would be the most amazing thing in the world. Especially if there was a little Parmesan cheese sprinkled on top.I love roasted asparagus. Maybe I would like other roasted veggies, too.

Hopefully when I write again on Sunday I will have a recipe or two to share and a new favorite side dish.

Yesterday, I boiled some pasta (mezzi rigatoni), I had purchased pre-cut slices of squash and zucchini so I sauteed those in olive oil until they were soft and yummy, then I wilted down some spinach, I also heated up some chicken sausage. When the pasta was done, I threw everything in one pan with some salt, pepper, and butter and mixed until everything was incorporated and hanging out together. Yum!
