I tried a new recipe today. In fact, I tried two new recipes today.
The first one was chili that my friend Janet made on Thanksgiving Eve. She calls it Cheesy Chicken White Chili and it was so good I asked her for the recipe. It's really easy to make and very tasty. I haven't asked her, but I'm sure she won't mind if I share the recipe.
3-4 chicken breast halves
2 cans Great Northern beans
1 can Healthy Request cream of chicken soup
16 oz salsa
8 oz shredded mozzarella cheese
Layer the first four ingredients in the crock pot. Cook on high for 6 to 8 hours or on low for 8 to 10 hours. Add cheese during the last hour of cooking. Before serving, shred the chicken and the cheese. Top with goldfish crackers or corn chips, like Fritos, if desired.
I used frozen chicken breasts. It works very well. I used four chicken breast halves, and my chili was basically deliciously seasoned shredded chicken. Next time I make this - and there will be a next time - I'll probably only use two chicken breast halves. Oh, another thing...this makes a HUGE batch of chili. I have enough for at least one more meal this week and I froze the rest. There's easily two meals in the batch I froze. I'm thinking of having some for lunch one day this week. I'll cook up some brown rice and put the chicken on top. Filling, healthy and delicious!
As much as I was looking forward to making the chili, I was even more eager to make these cookies. These were the first things I pinned on Pinterest. I sorta made a deal with myself that I would allow myself to have a really delicious treat once a week, so these were my treat this week. Man, were they good. These may be the best chocolate chips cookies I've ever made. When they came out of the oven, they were soft and sweet and delicious. When they cooled, they were soft and a little chewy and even more delicious. AHHH. I love cookies. And look how circular and pretty they are! I was proud of my baking skills today.
