#358 chicken pizza, books and goals

Last time I said I wouldn't write about food, but now that I'm writing, food is all I'm thinking about.

I made a new recipe yesterday: buffalo chicken pizza. I got the recipe from the cookbook "Sam the Cooking Guy." When I was reading through the cookbook last year, I saw this recipe and wanted to try it, but I guess I wasn't feeling as adventurous then. Anyway, I LOVE buffalo chicken flavor, so I thought this would be awesome and it's really easy. Here's the breakdown:

1 store-bought pizza crust - I used Boboli
2 1/2 cups of shredded chicken from a deli-roasted chicken (we had a roasted chicken from the deli a couple of days ago, and I used the meat that was left. I had about 1 1/2 cups and it worked fine.)
1/2 cup of butter (since I didn't have as much chicken, I used only about 1/4 cup of butter)
4 tbsp Frank's Red Hot Sauce
1 cup mozzarella cheese
1/2 cup chunky bleu cheese dressing

1. Melt the butter in a pan on the stove. When it's melted, remove from the heat and add the chicken. Stir to combine.
2. Add the Franks's Red Hot to the chicken and the butter. Stir until combined. Set aside.
3. Spread the bleu cheese dressing over the crust.
4. Spread the chicken mixture over the dressing. It will be messy and that's okay.
5. Cover with cheese.
6. I then chopped up some red onion and sprinkled the little pieces all over the pizza! I just threw that step in myself.
7. Bake at 425 degrees until the cheese is bubbly and the pizza looks delicious.

I loved this pizza. I thought it was great. My boys didn't like it as well as I did. What I learned yesterday is that MT isn't a big fan of the flavor of buffalo chicken. He also didn't care for the fabulous dip I made last week. T did take two bites of the pizza, and he just didn't like it at all. I was okay with the fact that they didn't care for it. At least we tried something different. You can't hit a home run every time.

My dad got here tonight. He's going to stay with us a for a couple of weeks and then take T and Osi to California while T is off track and MT and I are in the Caribbean. We are happy he's here!

I've read three interesting books this month, and each of them was very different. The first was by Rebecca Wells and it took place in La Luna, Louisiana. I loved it. It was called "The Crowning Glory of Calla Lilly Ponder." The next book was by a Swedish lady, at least she lives in Sweden now and the story took place in Sweden. It was called "Benny and Shrimp." It was different, but enjoyable. It took me awhile to get into it, but I liked it. The third book was called "The Marriage Bureau for Rich People." It took place in India. Do you know that I love books about Indian people? I can't explain it. I don't really want to visit India, and I don't know anyone from India, but I really enjoy stories about India and the people. The India book was unusual, though, because it was written by a man. Usually most of the books I read are written by women. The book I'm currently reading is also written by a man. It's called "Hotel on the Corner of Bitter and Sweet." I love the title. It takes place in Seattle and I'm enjoying it so far.

At the beginning of the month, I set up some goals for myself, and I've accomplished most of the goals. They were pretty simple goals, like try a new recipe every week and buy a new battery for my camera. Still, I had a pretty big list and it felt good to check stuff off of it. I think that's why I love lists. I like to check stuff off. It makes me feel like I'm not just watching TV or writing minute details for seven people to read. (I love you seven people, though!!)
