#436 dinner plans

Let's talk about my weight loss journey. I am still on the plateau I've been on most of the year. In October I had three straight weeks of losing, then last Saturday, following a truly dreadful week, I gained 2.8 lbs, nearly obliterating the weight I'd lost the previous three weeks.

Sunday night I made some chicken enchiladas. I ate one and felt satisfied and good about my choice. On Monday morning I got on the scale and weighed X. Monday night I only had toast with jam and a glass of milk. I'd had a big lunch, so I was satisfied with my toast and felt good. Tuesday morning I weighed X-2. So my thought is that I'd like to eat lighter at night.

The problem is that I am hungry when I get home from work, even though I usually eat something around 4:30 or so at work to tide me over. When I get home, I am tempted by the treats or chips or whatever else is lurking while I'm cooking dinner. I think that if I come home and pop in a piece of gum and get a glass of ice water, it will help me get started through the cooking of the meal, then I can eat something light while the boys eat what I've made. Then I can have some of the leftovers for my lunch the next day. I'll let you know how that works out.

Tonight we had leftovers from the enchiladas and meatloaf. I actually cooked a baked potato for myself which was not a good option. Not because a baked potato isn't a good option, but because it takes awhile to bake a potato. I don't like the way the potato tastes when it's cooked in the microwave. I was really hungry by the time the thing was done. Dummy! Live and learn.

The fun thing about tonight is that T and I made cookies. (The pumpkin kind made with cake mix, pumpkin and chocolate chips.) T is taking a class at school where they are learning to cook. I thought he might like to learn to make these super-easy cookies that he enjoys eating. He did a good job mixing everything up and scooping the cookies onto the baking sheet. They taste good, too.
