#1008 mad for marinades

I'm in the mood to marinate meat.

This morning I whipped together a quick little marinade for fish. I got the main recipe from Pinterest, then I added a couple of things to that recipe and the fish turned out really well. Here's what I used:

canola oil
zest and juice of two limes (ask my sister - I love lime!)
honey
salt & pepper
sriracha hot sauce
minced garlic

I added the garlic and sriracha. I had tilapia fillets, so I put the fish in a gallon size freezer bag and poured the marinade on the fish. I sealed the bag and kind of massaged the marinade all over the fillets.  Tonight I dredged the fish in a bit of seasoned flour and cooked them in a skillet with a little oil and butter combo. I squirted a little more lime juice on those fillets while they were cooking and I'll tell you, it was tasty! The sriracha gave it just a little kick, but there was also a hint of sweetness from the honey and a little fresh zing from the lime.

Tomorrow we are going to have London broil steak. I made the marinade for that tonight. It smelled divine; I'm sure it will be so tasty tomorrow! Here's what's in the marinade:

balsamic vinegar
Worcestershire sauce
three big cloves of garlic
dried rosemary
a little squirt of sriracha (I like the flavor kick)
salt & pepper
canola oil

I don't measure anything out when I'm making a marinade. I just eyeball it and when I feel it's right, that's it. I just want the meat to soak up all the yummy flavors.

For the meat, I had a big hunk of some type of steak/roast (London broil is a cooking method, not really a cut of meat). I scored the meat several times on each side, then put it in a gallon size freezer bag and poured the marinade over. Of course I massaged the marinade into the meat and stuck it in the fridge. Tomorrow morning I'll massage it again and turn the meat package over so the marinade really soaks in. My intention is to grill the meat either outside on grill or inside using my grill pan. (I love that thing!)
