#1315 happy thanksgiving!

I'm kind of tired tonight. I spent a large part of the day in the kitchen. I enjoyed preparing and cooking all the food. I was most focused on the evening meal, but I had a plan for all three meals and snacks throughout the day.

This morning we enjoyed the almond kringle from Trader Joe's. It was amazingly delicious. I really wanted to buy another one when I was at the store on Tuesday, but I didn't see any. I'm so glad I bought two kringles when they were available. Hopefully the kringles will be back for Christmas.

Around noon we had some soup, crackers and dips. I had made beer dip and what I call "the perfect bite" dip. We also had some crab and lobster rangoons from Trader Joe's and some nuts. It was a nice little appetizer selection, I thought. MT made some pina coladas that were really great, too.

Throughout the day I was prepping the main meal. Here was the menu:

Prime rib roast
crock pot potatoes
sweet potatoes - Ruth's Chris style
prosciutto-wrapped asparagus
green salad with mandarin orange slices, pomegranate seeds, bleu cheese crumbles and pecans
veggie tray
rolls

I was planning to make some green beans, but that didn't work out. We had plenty of stuff without the green beans anyway. There was also a bunch of desserts:

chocolate cake
triple berry pie
pumpkin pie
pecan pie
pumpkin roll

When I finally finished putting everything away and cleaning up the kitchen, my feet and back hurt. I'm such a wimp! It was worth it, though. I thought all the food tasted pretty good and there was plenty of it. I really enjoy cooking and timing everything to get on the table at the same time. It's like a food puzzle that you have to put together.

Tomorrow I am only planning on cooking one meal. I had some leftover sweet potatoes and I want to make a sweet potato hash for breakfast maybe. Other than that, we're having leftovers. There's not much leftover prime rib; I just bought a five pound roast. But there is plenty of everything else. :)

I hope you all had a fun and happy Thanksgiving and got to spend the day with people you care about. Today was fun but I'm glad it's over!

Sounds like you had a busy day but a very rewarding one. It is quite a challenge to get everything done and ready to eat at the right time. Good job.
