On Sunday I cooked a pork shoulder roast. Sometimes these types of roasts are called pork butt, even though it's the shoulder. My dad was a master pork butt cooker. He used a delicious rub on the meat, and then cooked it low and slow for hours so that the aroma filled the house and made your mouth water whenever you came into the house, or even in from another room. The meat was so tender that he would pull the bone out just using his fingers.
I've only managed the bone-pulling feat once or twice. Sunday was not one of those times. I make my own rub using my favorite spices, but I didn't make nearly enough of the rub. The meat was still good. It was tender and full of porky flavor. It just fell so far short of my dad's creation that it was kind of a letdown, so it was NOT the best thing I ate this week.
However...
Later in the week, on Tuesday or Wednesday, I cut up some of that leftover pork, cooked it with some sautéed onions, seasoned it up a second time and made carnitas. That was good! Some of the pieces were sweet and fatty. Some were a little crunchy. Some were tender and succulent. The combination was delectable. I had the carnitas in tacos with some refried beans. MT had the carnitas in a huge salad. T had his carnitas mixed in with ramen noodles that he seasoned with sriracha. All three of us were very happy with our different uses of the pork.
By the way, the roast was enormous, so I put half of it in the freezer. In a couple of weeks, I'll make chili verde with part of it and probably a pork curry with the other part. I'm already looking forward to it!
