To be honest, I didn’t cook much this week, and it took me a minute to think about what I’d eaten that stood out. The best thing I ate this week is such a simple comfort food, but when I remembered it, I knew it was really the best thing I ate.
On Monday I worked at home and I made myself some pancakes for brunch. I use Bisquick for my pancakes. It’s what my mom and dad always use and though I’ve tried other brands of pancake mix, nothing compares to the yellow box of Bisquick. I like my pancakes kind of thick, so I am a little skimpy on the milk. I have a pancake griddle, but when I’m just cooking for myself, I use a frying pan. I put a little butter in the pan, let it get all sizzly, then pour in the batter and sprinkle a few chocolate chips on top. When the batter looks like it is just starting to set, it’s time to flip.
I eat my pancakes one at a time. I’ve never been a stacker. I smear a little Brummel and Brown spread on the pancake then add a squirt of Mrs Butter worth’s Lite syrup on top. I don’t like a lot of syrup, just enough to have some maple flavor. A perfect bite of thick, fluffy pancake with a chocolate chip, the creaminess of the spread and a taste of maple is so comforting and delicious. Sometimes the edges get a little crispy from the butter in the pan...my mouth is watering just thinking about it. I might have to repeat this meal next week!
