I made a new recipe today and it was really tasty! It was chipotle tamale pie from Ingrid Hoffman of the Food Network. I saw her make it a long time ago and thought it looked good. I don't know what made me think of it today. Maybe because the weather here is so cold and the sky is so gray; it just seemed like a comfort food day.
I found it very easy to make. I chopped up an onion, a green pepper and smashed two cloves of garlic. I threw all that in a pan along with some hamburger (MT prefers beef to turkey) and cooked that down. When the meat was cooked, I sprinkled cumin on the meat and veggies, then I added a can of pinto beans that I'd drained and rinsed, a can of diced tomatoes (14 oz. - I couldn't find an 8 oz can), and one chipotle chile, all sliced up, along with a little adobo sauce. I have to be careful with the chile and adobo sauce. It can be too strong for me.
I cooked all that down, then turned off the heat and added dried cilantro (about a palmful) and shredded cheese. I packed the meat/veggie mixture into an 8x8 pan that I'd sprayed with Pam cooking spray, then topped it with Jiffy cornbread mix that I'd prepared with one egg and 1/3 cup of milk. I baked it for about 20 minutes at 400 degrees, then let it sit for about five to ten minutes before cutting into it.
It was so delicious! If there was one add I'd make, it would be a can of sweet corn. Everything is better with corn, right? I don't know the points value, but I can tell you a small piece is very filling!
I'll certainly make it again. MT liked it a lot. T didn't try it. He'll have leftover spaghetti from last night.
For those of you keeping track at home, that's three new recipes in two days! BTW, the peanut butter fudge I made yesterday is my favorite of the two fudges.

Hi..from Jen. I've been getting caught up on your blog and now try to read it every night. My work blocked all blogs b/c some peeps were blogging from their desk... niiice, thank you very much jerks.
