#448 Swiss steak, broken friends and Fox Tuesday

I have got to tell you about the yumminess we had for dinner tonight. I've been craving Swiss steak, so I went online and found a recipe at allrecipes.com. It was really easy and tasty and pretty guilt-free.

Last night I chopped up three stalks of celery, grated three carrots and sliced up a medium onion. I sauteed them in a little vegetable oil, along with some salt and pepper, until the veggies were nice and soft. While they were cooking, I cut up some round steak in bite-size pieces and dredged the steak in flour. When the veggies were done, I put them in my crock pot. Then I put a little more oil in the hot pan and browned the meat.

When the meat was browned, I put it in the crock pot along with the veggies. I added two cans of petite diced tomatoes, a couple of shots of Worcestershire sauce, and a couple of pinches of brown sugar. I mixed it all up, put the lid on it and put the whole thing in the fridge.

This morning, I turned the crock pot to low and left the whole mess to cook while we were at work and school. When I got home, I made real mashed potatoes - you know, from actual potatoes, not the pouch, even though T loves the mashed potatoes from the pouch - and we feasted. It was so good! The meat was so tender and the flavor was lovely.

That's another new recipe this month! I'm on fire!

To follow up on yesterday's post, T's friend is still in the hospital. T said the word at school is that her whole right side is broken. Poor little Victoria. I'm sending kind thoughts her way in the hope that she recovers soon. She and T aren't the pals they used to be, but she was in his class throughout elementary school. I think they only have one class together now.

One more thing: have you seen the new show on Fox called "Raising Hope"? It comes on right after "Glee." I really like it! The baby is cute and the family is annoying yet endearing. Don't even get me started on "Glee". Tonight's episode was Gwyneth-tacular! Gwyneth Paltrow was on the show tonight and she was great.

OK, really, that's all for me tonight. I'm kinda tired, so look for me tomorrow!
