I promise I am not obsessed with food, even though this will be the third post in a row about food! I'm really obsessed with Pinterest. Today I tried another recipe that I found on the site, and it was a winner!
This morning, before work, I put together the marinade from this recipe for honey sriracha glazed chicken. It was super easy. You just mix a quarter cup of each of these ingredients together: stone ground mustard, BBQ sauce, honey and orange juice. The recipe called for a ridiculously tiny amount of sriracha; I added nearly a quarter cup. I mixed it all together and threw in four chicken breasts, covered the whole thing with plastic wrap and put it in the fridge. Tonight I got out the grill pan and started cooking.
So. Good. A little sweet, a little spicy. It smelled great while it was cooking and tasted even better.
The chicken was served with mac and cheese for T and roasted asparagus for me and MT. I love roasted asparagus. It's my favorite way to cook them. I break off the woody part, then I put a little canola oil, salt and pepper on them and toss them to make sure they are nicely coated. Then I roast them in a 350 degree oven until I can smell them, probably 15 or 20 minutes. I sprinkle some Parmesan cheese on mine and they taste nice.
I totally loved my meal tonight. Light and so tasty. And easy, too. Since I cooked four big chicken breasts, there are leftovers (not of the asparagus, though.) Hello lunch!
Now I think I'll go to bed. I haven't been sleeping very well, so I feel really tired and worn out today. And it's only Tuesday.
