#1167 all about taco-rama

MT and I moved in together during my senior year in college. We had a two bedroom apartment on Lovejoy Avenue in Pocatello. We loved having people over and were always looking for a reason to have a party. We went camping a lot in those days, and one of the meals we liked to cook while camping was tacos. It was easy to do and everyone liked it.

One day, back in town, we decided that it would be fun to invite a bunch of friends to come over for
tacos. We supplied the meat, and our friends had to bring beer and something to go with the tacos, like tomatoes, lettuce, cheese, olives, tortillas, etc. Taco-Rama was born. We did it several times over the years and it was always a lot of fun. There were some epic Taco-Ramas at our place. The apartment wasn't very big, but it had a good size kitchen and living room, so we could fit a bunch of people in there.

People got very creative with the items they brought. One time someone brought a 9x9 Tupperware container of sliced jalapenos in the jalapeno juice. After tacos and beer, the lid didn't get put on the Tupperware very securely and there was jalapeno juice everywhere. That was the night I had my first learning experience with jalapenos. Wash your hands very VERY thoroughly before touching any sensitive parts of your face or body.

When we left Poky to move to SLC, we left Taco-Rama behind, too. Fortunately, I had a chance to revive it, with some modifications, at my work. Now the company provides the meat and everyone brings some taco-related item. We just can't have beer there. :(

Even without the beer, it's pretty fun and people seem to enjoy Taco-Rama. We usually have it on or around Cinco the Mayo, which may or may not be an actual holiday in Mexico. (Anyone from Mexico or with knowledge of Mexican holidays want to comment?) Regardless, there's never a bad day for tacos in my opinion!

I will say though, that after three straight days of tacos (I cooked all the meat for the fiesta) that I'm done with tacos, at least for the week. That is, unless someone says, "Let's go to Chipotle!" then all bets are off because I'll probably have tacos.

Oh my gosh! I just Googled Taco-Rama images, and one of the pictures was a photo of my crock-pot full of taco meat that I posted on this blog a few years ago. That made me giggle!
