Remember a week or so ago when I wrote about all the stuff I bought at Trader Joe's? One of the things I bought was their Speculoos Cookie Butter. It's is weirdly good. It's the consistency of peanut butter but made with crushed Speculoos cookies. I haven't eaten very much of it, but in the past couple of days, I have found myself getting out a spoon and having some Cookie Butter straight out of the jar. The madness had to stop, but what was i going to do with it?
I wanted to incorporate the ingredient into something that I could take to work for Dip Day. Where do you go when you want to get a recipe? You go to Pinterest, of course! I typed Cookie Butter recipes into the search feature and got some ideas, but it wasn't what I had in mind. Then I saw a recipe (not in the Cookie Butter search) for "Puppy Chow". Puppy Chow is a version of Chex mix. Sometimes it's called Muddy Buddies, too.
Most of the Puppy Chow recipes called for peanut butter and that's when I thought "Why not use Cookie Butter?" So that's what I did!
I used nine cups of Chex mix, a combination of corn and rice Chex. Then I used about a cup of Cookie Butter and a cup of mini chocolate chips and a bit of butter. I melted the CB, chips and butter in a bowl in the microwave until it was smooth and creamy. I poured it on the cereal and mixed it all together until the cereal was coated. Then I put the coated cereal in a gallon-size bag and poured in some powdered sugar. I sealed the bag and shook it all up to coat the cereal in sugar. No, this is not a healthy treat.
Now the mixture is sitting out on wax-paper covered cookie sheets to dry a bit. It tastes pretty good. The CB gives it a slightly ginger-y flavor and there's just a hint of chocolate. It's crunchy and sweet. I think I could eat quite a bit of it without even thinking about what I'm doing.
I hope that my co-workers like it! I don't really want to have it around the house. :) I'll let you know what people think about it tomorrow.

One more little tidbit to share:
One of the sports talk radio stations I listen to is giving away a trip to Michigan to watch the University of Utah play against the Michigan Wolverines at the Big House. They play a "sounder" at certain times of the day and you have to be a certain caller to be qualified for the trip. Today I qualified! I didn't win anything but a chance at the trip. They're going to draw the winner next week. The game is on Sept 20. I think the station pays for the flight and a hotel and tickets to the game. It would be so fun to win and go to that game!
