Kelsie and Nicole, my friends at work, are very good at eating veggies. Their lunches are mainly veggies with a nice portion of protein and not much fat. You guessed it - they are slim and healthy. I want to be like that, so I try to pay attention to things they eat and implement some of their ideas into my own food repertoire.
Lately Nicole has been eating a lot of egg muffins. Kelsie isn't much of an egg eater, but she tried some and liked them a lot. Tonight, I decided to give it a go, too.
An egg muffin is basically some veggies and eggs baked in a muffin tin so they come out in little muffin shapes. This is not a photo of mine, but they look a lot like this:
I used some red pepper that I chopped up small and I sauteed until it smelled really nice. Then I added some Southwestern seasoned shredded potatoes and warmed them up. I took the peppers and potatoes out of the pan and cooked up a little country sausage until it was nice a brown. Finally, I took a handful of baby spinach and chopped it up in ribbons. I mixed up about eight eggs along with a splash of milk and some salt and pepper. I sprayed the muffin tin with canola oil spray and ran my finger along the sides of the cups to make sure every spot was covered. I piled a couple of spoonfuls of potatoes, peppers and sausage in the cups, then a bit of spinach on top of that. Next, I filled the cups with the beaten egg and topped each of them off with a bit of shredded cheddar cheese. I baked the muffins for about 20 minutes at 350 degrees.
The muffins were kind of puffy and the cheese was melted. I poked a fork in one of the muffins and it came out clean, so I thought they were done. After they had cooled for a few minutes, I ran a knife along the edges of each cup and with a spoon, gently popped the muffins out onto a cooling rack. MT had to try one right away and he really liked it! He put some hot sauce on it and said that he would have some of those egg muffins for breakfast.
I'm pretty excited to try them tomorrow! I'll let you know how I like it. If they're good, it's a total win. Veggies. Protein. Cheese. (OK, cheese isn't technically a win, but...) Plus the egg muffins are very portable and quick to grab in the morning or even for lunch. Here's hopin'!
